From Bland to Grand: How She Recreated Papdi Chaat with a Healthy Twist!

Inspiration Blooms: A Papdi Chaat with a Healthy Heart

Shalini's inspiration came from a personal desire to create healthy versions of her parents' favorite foods. They loved chaat, but health concerns often prevented them from indulging. Determined to find a solution, Shalini decided to enter the Suvai-2024 contest and create a healthy papdi chaat recipe they could enjoy.

Shalini’s Healthy Papdi Chaat Recipe

Here’s the innovative recipe that earned Shalini her runner-up position in the Suvai-2024 contest:

Ingredients:

  • Nutreat sprouted sari multigrain premix - 200 gms
  • Grated coconut - 1/2 cup
  • Nutreat millets muesli - 150 gms
  • Ghee - 2 tbsp
  • Salt - 1/2 tsp
  • Curry leaves - 14 leaves
  • Carom seeds - 1 tsp
  • Water for kneading
  • 1 small tomato
  • 1 small onion
  • 1 small cucumber
  • Green chillies as preferred
  • Coriander leaves - 1/2 cup packed
  • Lemon juice - 1 tbsp
  • Cashews - 6 nos.
  • Raisins - 6 nos.
  • Almonds - 6 nos.
  • Pistachios - 6 nos.

Directions:

  1. Knead 200 grams of Nutreat sprouted sari multigrain premix with 1 tbsp ghee, 1/2 tsp salt, 8 crushed curry leaves, 1 tsp carom seeds, and water. Cover with a muslin cloth for 20 minutes.
  2. Make small balls and roll them into small rounds.
  3. Grease a mould for papdi basket and cover it with the prepared rolled multigrain sheet. Prepare 6 more.
  4. Air fry or bake at 180 degrees for 6 minutes or until slightly brown and crisp.
  5. Finely chop the tomato, onion, cucumber, and green chillies.
  6. For the millet muesli bhel, heat 1 tsp ghee in a pan, add chopped dried fruits (cashews, almonds, raisins, pistachios), then add 7 tbsp Nutreat millet muesli and roast for a minute. Add 6 curry leaves, chopped coriander leaves, and 1 tbsp lemon juice.
  7. Blend 1/2 cup coriander leaves with 1/2 cup grated coconut for the fresh chaat chutney.
  8. Assemble the chaat by placing the baked multigrain baskets, topping them with the prepared millets muesli bhel, and garnishing with chopped vegetables, fresh curd, freshly made coriander coconut chutney, and coriander leaves.
  9. Serve and enjoy a delicious, delightful, and nutritious snack.
